This coconut and lime pie is extremely healthy and will not turn you into a hippo and let me add that…it is finger licking good! Hooorrraaayy!!!

This recipe has the best and healthier fats you can possibly eat (and that will not make you fat!):

Let me explain you a bit about these two fellows.

Coconut oil

Virgin coconut oil is the most nutrient dense part of the coconut. It is rich in fatty acids (medium-chain-length) that have many health benefits such as reducing bad cholesterol, improving thyroid function and boosting metabolism. However, the quality that makes this oil unique is the lauric acid. This acid has strong antiviral, antifungal and antibacterial properties helping to strengthen the immune system as well.


According to Dr. Normal Walker, avocados are “the finest fat we can put in our bodies.” They are rich in monounsaturated fat (a good one), fiber, potassium (2x more than bananas), folic acid, vitamin E (a powerful antioxidant), protein, B vitamins, carotenoids (antioxidants). All these properties make avocados a great fat to eat on a daily basis without the fear of gaining weight – they actually help losing it ; )

Another benefit from this pie is the fact that all the ingredients aren’t cooked or processed which means that its nutrients are intact and alive and its energy is extremely high.

So now let’s go to what really matters…the recipe, obviously.


Ingredients (crust)

2 cups raw almonds, peeled

1 cup shredded coconut

1 tablespoon lemon zest

2 tablespoon lemon juice

2 teaspoon vanilla powder (optional)

1 teaspoon sea salt

2 tablespoon brown rice syrup

Ingredients (filling)

5 ripe avocados

1/2 cup lemon juice

1/4 cup lime zest (around 6-8 limes)

1/4 cup brown rice syrup

2 tablespoons of coconut oil (if it’s not liquid you can put it in a glass and then that glass inside a bowl filled with hot water and stir until it’s liquid)

2 teaspoon vanilla powder (optional)

Preparation (crust)

– Mix all ingredients in a food processor until it starts to hold together;

– Grease a pie pan with a bit of coconut oil;

– Press the mixture into the pie pan, cover with film and put it in the freezer;

Preparation (filling)

– Blend all ingredients until it has a creamy texture;

– Remove the base from the freezer and put the filling on the base;

– Put it on the fridge for about 30 minutes and it’s ready to eat!

Even if it’s not fattening and has lots of benefits, I recommend you eating it in moderation, ok?
